The Easiest Cranberry Baked Oatmeal
This spiced cranberry baked oatmeal has been my saving grace since starting personal training. I’m a huge fan of our local Colectivo baked oatmeal. However, paying almost $6/order is slightly insane to me. By making our own apple cranberry baked oatmeal, it not only saves money, but it saves us a ton of time. This baked oatmeal recipe can be easily prepped and baked ahead of time. This means that all we have to do is cut, heat, & serve.
Meal Prepping Baked Cranberry Apple Oatmeal
When I started this new job, went from waking up at 9am to waking up at 4am. It took a few days to get used to. Needless to say, my morning routine has become much more streamlined and efficient. Meal prepping this cranberry baked oatmeal makes all the difference in helping kick start my day with nutrition and lasting energy. Ian loves it as well. After working out, he eats a serving of egg-based breakfast casserole, and takes some cranberry baked oatmeal to work. We’re both trying to eat more calories, and stuffing it all in at once isn’t ideal for morning tummies. By having some breakfast before and at work, we’re able to get in more muscle-building nutrition.
Spiced Cranberry Baked Oatmeal Recipe

Cook Time: 50-60 min
Preheat: 375 degrees
Ingredients
- 3 cups applesauce (we use sweetened)
- 4 eggs
- 1 cup brown sugar
- 1 tsp vanilla
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1 tsp salt
- 1 1/2 tsp baking powder
- 2 cups almond milk
- 2 cups cranberries (fresh or frozen)
- 3-4 apples, peeled & cored
- 4 cups rolled oats
Instructions
- Preheat the oven to 375 degrees.
- Combine eggs, brown sugar, vanilla, cinnamon, nutmeg, allspice, salt, baking powder, and almond milk in a large bowl.
- Slice larger cranberries crosswise. I just leave the smaller cranberries whole. Add to mixture.
- Dice apples into small pieces, about the size of M&M’s. Stir into mixture.
- Stir rolled oats into mixture.
- Apply non-stick spray to 13×9 baking dish. Pour mixture into dish, and smooth out using a spatula, making sure that cranberries and apples are roughly evenly distributed. Bake for 50-60 minutes, or until center is no jiggles when moved. (Can sometimes take over an hour.)
If you’re like us and you have an abundance of eggs, feel free to throw in more eggs for extra protein! More eggs will make the consistency little thicker and “custard-like”, but we just love the extra protein in the form of something other than scrambled eggs.
